Terroir / under soil : | West Vallée de la marne/ Clay-marl basements, covered with chalk composed of calcite granules and fossils of belemnites (secondary era molluscs). |
Type of viticulture: | Sustainable (reasoned) viticulture, biocontrol. |
Harvest and vinification: | Manual harvest, first juice exclusively (cuvée), double fermentation (alcoholic and malolactic), aging in thermo-regulated stainless steel tanks. |
Ageing / Disgorgement: | 24 months on lees, disgorged in February 2019. |
Dosage : | Brut, 0,7 g/l. |
Colour : | Smooth effervescence, straw yellow colour. |
Flavour : | Nose is made around the pastry, toast, red fruits, see compotes. Notes of brown tobacco in the finish. |
Palace : | Fresh attack and perfect sugar-acid balance. Mouth creamy and sour mouth. |
Serving temperature: | Between 8 and 10° C. |
