Breakfast (brunch)
“Champagne-breakfast” in Anglo-Saxon countries” or “Champagner-Frühstück” in Germany and in German-speaking Switzerland, is a pleasant and practical meal which the Anglo-Saxons call the brunch – contraction of breakfast and buffet – that replaces at the same time breakfast and lunch (every Saturday, on Sundays and on special occasions).
The ranged of dishes that are proposed generally imposes a compromise. Besides, it will be necessary to deal with the dominant component of the buffet (soft, spicy, exotic flavors, etc.) or of the menu. Some consensual champagne, as the cuvée “Tradition” or the cuvée “Crescendo” or some singular champagne, as the cuvée “Fût de chêne” will perfectly suit.

Apéritif
A privileged and friendly moment, the apéritif often precedes a lunch or a dinner and has to remain necessarily light. By definition, it has to whet the appetite. Champagne, delicate and sparkling wine, is particularly appreciated.
To accompany an apéritif, Mater & Filii advises you some light wine, with a sour-sugar balance leaning towards the acidity.
For their freshness, their sharp and light texture, the cuvée “Blanc de blancs” or the cuvée “Crescendo ” – and even the cuvée “Tradition ” – seem the most appropriate.
Any suggestion? If the apéritif gathers enough guests, why won’t you open successively both cuvée (the cuvée “Blanc de blancs” at first and then the cuvée “Crescendo” or the cuvée “Tradition “)? Then you can have your dinner guests discover the differences between every cuvée during a privileged moment.
Be careful! “Classic” and “usual” side dishes during the apéritif, such as peanuts, grilled almonds and other dried fruits, olives or crisps with very pronounced flavors (salted, smoked, fat) are to be banned because they cannot emphasize the subtle and delicate aromas of the Mater & Filii champagne.

After meal
If dessert is not the best moment to serve champagne, the latter gets its primacy back when taste buds take a rest. All the range of cuvées Mater & Filii can be considered then. However, be careful not to propose champagne shortly after or shortly before coffee, liqueur or … onion soup.

End of the evening
At the end of evening, when the conversations go on, you can serve champagne to your guests until the end of the night. You can choose prestigious cuvées, as the cuvée “Blanc de blancs”, the cuvée “Fût de chêne ” or the cuvée “Crescendo”, that you can enjoy with a cigar while setting the world to rights.

Dance
Champagne is dancers’ best partner. It refreshes their energy and renews their pleasure while cooling them off. Some light and sharp champagne, as the cuvée “Blanc de blancs” or the cuvée “Crescendo” will be ideal.

Marriage, festive ceremony
What better symbol of joy, party and happiness than champagne?
During the reception or “vin d’honneur”, champagne (always served very cold) is an excellent choice. Your family and your guests will be delighted to be welcomed as such and by this mark of respect.
Some light and sharp champagne, as the cuvée “Blanc de blancs” or the cuvée “Crescendo” will be ideal.
Count 1 bottle for three dinner guests.
If you can serve champagne during the whole meal, choose some well-balanced champagne, that will satisfy the largest number of guests and accompany the various dishes, as the cuvée “Tradition” or the cuvée “Crescendo”.

Intimate meal
In most cases, an intimate meal does not seem to be the ideal moment to discover and taste various types of champagne… It seems more appropriate to choose a single, rare and prestigious cuvée as the cuvée “Blanc de blancs”, the cuvée “Fût de chêne” or the cuvée “Crescendo”.

Evening between connoisseurs
A true mark of respects for your “expert” guests (or experts-to-be, supposing that we can define a “connoisseur”) is to make them discover several sorts of Mater & Filii champagne.
You will find below a possible way to discover (or rediscover) all – or just a part of – the cuvées Mater & Filii (subjectively and gradually classified here by “strength of character”):
