Cuvée Clos David
Parcellar Cuvée coming from our oldest vine, aged 60, exclusively planted in Pinot Meunier – the king grape and demanding of the Valley of the Marne – and consisting only of the most beautiful grapes.
Absolute expression of a terroir, know-how and a state of mind, vinified and aged under wood, this Clos David cuvée will harmoniously accompany the following dishes:
Oysters,
Grilled Breton lobster,
Tail of roasted hulled lobster on fresh tagliatelles, lobster cream,
Langoustines in thick carpaccio, risotto and parmesan emulsion,
Snacked Saint-jacques nuts, celery puree, camelina oil and grilled pine nuts,
In a hurry of butternut and plays candied pig,
Can fillet cooked at low temperature, orange tart condiment, celery puree, full-bodied juice,
Poultry with morels,
Veal twists, roasted carrots with honey and cardamom,
Crispy veal rise with meat juice, orange peel and vermouth,

Bright dress with a rather dense appearance, light straw yellow color with bright gold yellow reflections. |
| Nez : | The first nose is elegant, concentrated and eloquent. It evokes orange blossom, pastry and woody smells reminiscent of grilled almond, milk caramel and sweet roasting, as well as fruity notes of tangerine and hot apple. After aeration, this cuvée gains tactile breadth that is accompanied by notes of peach, mirabelle, sweet spices, lime, raspberry and honey. |
| Bouche : | The contact in the mouth is soft and fresh with creamy bubbles. This Clos David cuvée develops a plump and coated fruity material, supported by a fresh and just tense orange acidity. The chewing of the wine makes it possible to appreciate its very tactile fruity thickness, which complements a certain pastry treat brought by a woody and melted ageing. The whole vibrates in unison and offers a sapid finish, harmonious and fresh, with a remarkable double fruity and saline resonance. |
